They’re especially popular in the fall when kale is in season, but honestly, once you try them, you'll be making them on repeat. Perfect for movie nights, lunchbox snacks, or as a crunchy topping for soups and salads.

I have to admit, I wasn’t always a kale lover. My avid gardener dad grew kale in our kitchen garden and always tried to convince me to eat it. Back then, I wasn’t so easily persuaded. But if he could see me now, munching happily on kale chips like they’re the best thing ever, I think he’d be pretty pleased. Maybe this is the trick to getting kids to eat their greens—turn them into crispy, salty, totally addictive chips!
This recipe was also inspired by my BBQ Spice Mix (an addictive seasoning that I've also used on kale chips!)

- Sea salt
- Garlic powder
- Smoked paprika powder

Instructions

Prep the kale
- Preheat your oven to 300°F (150°C).
- Wash the kale thoroughly and dry it COMPLETELY (moisture is the enemy of crispiness!).
- Remove the tough stems and tear the leaves into bite-sized pieces.
Seasoning raw kale Chips

- In a large bowl, drizzle the kale with olive oil and toss until lightly coated.
- Sprinkle the uncooked kale with salt, garlic powder, smoked paprika, and onion powder. Massage the leaves to distribute the seasoning evenly.
Bake the kale chips to perfection

- Spread the kale chips in a single layer on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, flipping halfway, until the edges are crispy but not burnt.
- Let the kale chips cool for a few minutes (they crisp up even more as they cool!).
👉 Hint: Don’t overcrowd the pan! Overlapping kale chips will steam instead of crisp. Use two baking sheets if needed.
